The Kirkland Signature Bowl of Chipotle Chicken and Lemon Cilantro Rice looked like a hearty meal.

The Kirkland Signature Chipotle Chicken Bowl with Lemon Cilantro Rice — almost 3-½ pounds of food in one casserole dish — came with chunks of chicken, lemon cilantro rice, fire-roasted corn, beans, shredded cheese, lime wedges, salsa, and Kirkland Signature guacamole.

The package had heating instructions for both the oven and the microwave, but I chose to cook it in the former because it seemed like the best way to judge the quality of the meal. Still, it was nice to know I had Costco’s blessing to heat it up quickly in the microwave.

I removed the lid, lime wedges, salsa, and guacamole, mixed in the rice, beans, cheese, and chicken, and heated the pan in the oven at 400 degrees Fahrenheit for 40 minutes.

By the time it was done, the shredded cheese had completely melted and the chicken, rice and beans were piping hot. I squeezed lime slices over all kinds of food and served with salsa and guacamole.
