RHUBARB CRISP-A Recipe from Nancy

In a bowl, combine:
4 cups of coarsely chopped rhubarb
¼ cup all-purpose flour
¼ cup white sugar
Mix and set aside:
½ cup strawberry jam
In a separate bowl, combine:
1 cup of all-purpose flour
1 ½ cups of granola
½ tsp. cinnamon
½ tsp. ground ginger
Mix in:
½ cup brown sugar
½ cup chopped pecans
Process in ½ cup softened butter until crumbly
Press 2 cups of mixture into an 8-inch square baking dish.
Place the rhubarb mixture on top.
Cover evenly with remaining granola mixture.
Bake at 375 F for 40-50 minutes or until deep golden and rhubarb is tender.
Yield: 8 servings
